Gingerbread is a classic so it was a tricky one to adapt to maintain the flavour and texture while still being free from wheat, gluten, dairy and eggs! I decided to base it upon a recipe I found of Delia Smith.

This is a simple smoothie with just frozen mango and Tropicana juice! Zingy, fresh and full of goodness. Great breakfast, snack or great way to cool down on a hot day.
I love Lemon Drizzle – It needs to be zesty but light and moist. This is the closest I have come to perfection so far… I hope you like it.
