Rocky Road

Ingredients

Dark Free From Chocolate
Free From Puffed Rice Cereal (or something similar)
Glace Cherries
Desicated Coconut
Mini Marshmallows (Regularly use vegan ones!)
Coconut oil - To melt with chocolate pieces

Directions

  1. Line a square cake tin with cling film; allow enough overhang to cover the top surface.
  2. Melt chocolate pieces with coconut oil.
  3. To melt chocolate: Add coconut oil to broken chocolate pieces into a microwavable bowl. Place in microwave. 30 seconds, mix, 30 seconds, mix; continue until melted. Keep an eye on it as you don’t want it to burn!
  4. Add all other ingredients to the melted chocolate. Mix well. Add to prepared tin and refrigerate for 2 hours. Turn out, cut up and serve. Keep chilled.
