Quinoa and Satsuma Stuffed Mushroom

Quinoa stuffed Portobello mushroom with peppers, green beans and Satsuma - The Satsuma was nice and fresh compared to the Chilli that was used in the veg – you could also add pomegranate seeds for added taste and colour.

  1. Portobello Mushroom Quinoa Green Beans Peppers Satsuma Chili Seasoning Oil of choice for frying
  2. This is what I did...
  3. Add quinoa to a pan of water and bring to boil then simmer until cooked. Fry off the veg in a little oil and added seasoning and the chili. Mix together. Pull stork out of the mushroom and stuff with filling. Bake for 15mins on 170 fan assisted oven. Add slices of satsuma before serving.

  5. I have since added pomegranate seeds too – try it!
