Fresh minted mushy peas with poached cod and paprika potato wedges. It’s fish and chips gone glam!

Ingredients

Cod fillet
Frozen peas
Fresh mint
Olive oil
Potatoes
Paprika
Salt
Pepper

Directions

  1. Chop potatoes into wedge shape and sprinkle with paprika, salt and pepper – Bake for approx. 40 minutes on 180. Cook up you peas then place in food processor, add a dash of olive oil and a sprig or 2 of fresh mint (leaves only). Poach cod fillet.
