Freshly made chicken broth using homemade stock from roast chicken carcass.

- This is what I did...
- I started with a little oil in a casserole dish and fried off the onions, mushrooms and baby corn along with salt and pepper. Homemade chicken stock (See post: Chicken Stock) was added with the roast chicken, spinach and sweet corn and bought up to boil. Once reached boiling point, allow to simmer for 10/12 minutes. Turn out heat and add a portion of rice noodles. Rest for a few minutes before serving.
